Santol, also known as Cotton Fruit has an interesting combination of flavours. The pillowy white pulp covering the seed has a milky sweet taste with floral hints and mild apple or peach notes. The rind of the Santol Fruit, on the other hand are popularly paired with shrimp paste, salt or fish sauce to complement its sharp sour taste. There are other ways to consume this fruit, in the Philippines for example, Santol can be preserved in a brine or cooked in coconut milk & spices to serve as a dish or an appetizer.
